Chapter 211 Braised Pork
Chapter 211 Braised Pork
Sanmao, who had not been seen for a day, finally showed up at the dinner table.
"Third brother, where have you been all day? Qiangzi and Xiaoxing have been waiting for you all day." Simao asked while picking up some food.
"I'm going to the county town. Didn't I tell you when I left?" Sanmao picked up a piece of braised pork and put it in his mouth, saying with his mouth full of oil.
We are having braised pork tonight, the recipe is the one Xiaocaoer provided before.
Prepare one pound of pork belly, onion, ginger, garlic, sugar, star anise, cinnamon, bay leaves, soy sauce, and wine. Wash the pork belly, cut it into even-sized cubes, put it in a pot with cold water, add ginger slices and a little wine, boil the water after it boils to bring out the impurities in the pork, then remove it and drain the water.
Heat oil and sugar in a pan, stir-fry over low heat until the sugar color comes out. When the sugar melts and turns into caramel color and small bubbles appear, pour in the pork belly and stir-fry evenly so that the surface of the pork is coated with sugar color.
Add onion, ginger, garlic, star anise, cinnamon and bay leaves and stir-fry until fragrant. Then add soy sauce and wine and stir-fry evenly. After each piece of meat is colored, pour in appropriate amount of hot water to cover the pork belly. Bring to a boil over high heat, then simmer on low heat for 35 minutes. Stir the meat from time to time to prevent it from sticking to the pan.
When the meat becomes soft and the soup is thick, add salt to season and then simmer over high heat until the sauce thickens. The braised pork made in this way will be bright red in color, fatty but not greasy, and melts in your mouth.
The most expensive thing when making braised meat is not the meat, but the spices, wine and sugar. In ancient times, these were only affordable by wealthy people and were rarely used by ordinary people, let alone for cooking.
Xiaocaoer kindly provided the recipe of braised pork to Jixiang Restaurant.
"It's so delicious, mom. Your cooking skills are getting better and better. I haven't eaten such delicious braised pork for a long time. I want to eat it again tomorrow." Simao picked up another piece of braised pork and said.
"If it tastes good, eat more. Ask your mother to cook for you tomorrow. Tell grandma or mom if you want to eat anything else. While you are at home these days, ask your mother to nourish you well. You see you have all lost weight. Tomorrow I will make some bone soup, some pork ribs, and some braised pork. You will grow taller and gain weight by eating them." Old Mrs. Yang gave each of her grandchildren a piece of braised pork.
"Thank you grandma. What I miss most when I'm out here is grandma and the food at home."
"Yes, now in the provincial capital, we can come back once in a while and eat home-cooked meals, but in the capital, it is considered good to be able to come back once a year. What should we do if we want to eat home-cooked meals then?" Simao asked.
Suddenly, several children who planned to go to Beijing felt that the food in their bowls no longer tasted delicious.
"What's so difficult about this? Our family runs a fast food restaurant called Maozhu. Many of the dishes there are also cooked at home. If you want to eat, just go to the restaurant." Xiao Cao'er put the braised pork that Old Lady Yang gave her into her mouth. Her mouth was small but full of meat.
"Also, if there are any new dishes at Jixiang Restaurant, Brother Hua Ming will send the recipe back home, and their chef will definitely be able to cook it. How is that different from eating at home?"
"Sister, the dishes may taste the same, but the people who cook them are different, and the feeling of eating them is different. We are not the kind of people who care about appetite. We are not eating the dish, but for the person who cooked it, okay?" Simao increased the speed of picking up dishes by two points.
"You are right, little brother. He is the one who can't bear to cook." Damao also nodded.
"Brother, little brother, you can just say you can't bear to leave grandma and mom, don't beat around the bush." Although Sanmao was reluctant to leave home, he traveled around for business and had more free time, so he must have come back more often than them. Thinking of this, his reluctance to leave home was much lessened.
"What about me? Besides you being reluctant to leave grandma and parents, you never said that you were reluctant to leave me?" Xiao Cao'er said.
"How is that possible? Everyone wants it, so how could they miss their sister?" Simao said.
"Humph."
After dinner, everyone washed up and went back to their rooms to do their own things. Sanmao went into Xiaocaoer's room.
"Today, my brother told Brother Qiangzi and the others about the plan. Brother Qiangzi and the others wanted to go out for a walk before they reach the age of marriage."
"That's fine. Let them take a look around the capital first and take a look around the emperor's feet. Then they can think about whether they want to come back or help out in the shop outside. Anyway, we have signed the soap contract with Brother Hua Ming, and we can officially start production after the tests here are completed. It's not a problem to arrange a dozen of them in." Sanmao picked up the poem Xiaocao'er wrote in the afternoon and began to read it.
"This is also a way. It depends on their wishes then." Xiao Cao'er also nodded.
"Today at my grandparents' house, did your uncle and the others mention the soap recipe to you?"
"No, I think they may not believe that I can make the decision on this matter, and they will definitely come to find mother when the time comes. I will stay at home for a few more days, and I hope they will come while I am still at home." Sanmao said with a raised lip corner.
"Third brother, I have an idea here. I wonder if it is feasible. You can take a look at it." Xiao Caoer handed Sanmao the plan for opening a teahouse that she had written in the afternoon.
"Open a teahouse? There seem to be quite a few teahouses in the capital, and there are also storytellers." Sanmao said as he looked around.
"In fact, if you want to stand out when opening a teahouse, the storyteller is a very important part. His storytelling skills and the content of the stories he tells are particularly important."
"Don't worry about the story. I'll send it to you when I finish writing it. You just need to find someone with good storytelling skills." Xiao Cao'er said.
Sanmao was stunned, "Sister, can you write stories?"
"I can't write, but I can copy."
